The Quartirolo is a traditional cheese whose name comes from the feeding of cows with “erba quartirola”, the last fresh grass that grew before winter, in the pre-alpine valleys of Lombardy.
It is consumed with different degrees of ripening. After a few days of production, a fresh acidity and delicate fragrance can be appreciated, and as the cheese matures, its flavor becomes more intense and aromatic. It is of semi-soft consistency, its paste is solid, compact, and clean-cut.
It's sweet potato fudge's best friend. It is also used for cheese boards, salads and hot meals. When fresh it pairs well with recent white wines, while the more mature variant adapts perfectly with intense whites or unctuous red wines with a low level of tannins. It is advisable to keep it refrigerated at a temperature between 2 and 8 ºC. Its shelf life is 90 days.
