How To Prepare a Torta Rogel?
Since we started to ride the Christmas train, and getting excited about food we decided to keep bringing you our favorite recipes! Last week we gave you a recipe of Sweet and Salty Piononos. We still have so much to show you! Here, we will teach you how to make one of our favorite desserts. A Rogel Cake!
The Rogel Cake is an Argentina’s traditional cake that you can find not only on an after dinner Christmas table but also at birthdays, weddings, and many social gatherings. This special cake is made with of eight crispy layers of a delicate crunchy pastry and covered with delicious Italian meringue, and as many special Argentina desserts, it has our most beloved sweet ingredient: Dulce de leche. So without much further a due, here goes the recipe!
Ingredients (5 servings):
- 1kg / 2.2 lb of Dulce de Leche “Repostero”
Pastry:
- 2 cups of 0000 flour
- 5 egg yolks
- 2 eggs
- 50gr/ 1.7 oz of butter
- 2 tablespoons of cognac
- 1/4 tablespoon of vanilla extract
- A pinch of salt
Italian Meringue:
- 1 cup of sugar
- ½ cup of water
- 4 eggs whites at room temperature
- ½ teaspoon of lemon juice
Preparation:
- Blend the butter, flour and salt until it looks crumbly. Add the cognac, the 5 egg yolks and the 2 eggs. Keep blending and this will become an homogeneous mix.
- Let the dough rest in the fridge for around 30 minutes.
- Preheat the oven to 400 f
- Spread some flour and roll out the dough as thin as you can, cut out 8 circles and place them over baking paper leaving space between them.
- TIP!: Before taking them to the oven prick them with a fork several times. This will prevent the pastry from bubbling while baking it.
- For the Italian Meringue, in a small saucepan, combine the sugar with the water. Then, combine the egg whites with the lemon juice and mix it until soft peaks form. Add the previously made sugar syrup and keep mixing for two minutes.
- Once you have all the eight layers ready, it is time to assemble this amazing dessert. Spread the Dulce de Leche Repostero abundantly over each layer until the last one, where you should place soft peaks of the Italian meringue.
